Want to have something that will help in the immune system and also help in weight loss. This chicken broth gets an anti-inflammatory boost from spices like cardamom, ginger, and turmeric. The broth is made with desi ghee which has its own twist in taste and benefits. For a snack or light meal, with buns or crispy sweet potato toast.

Ingredients

BROTH BASE INGREDIENTS:

  • 3 1/4 pounds of boneless chicken
  • 12 1/2 cups filtered water
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon desi ghee
  • 1 teaspoon salt
  • 1 basil leaf
  • 1 yellow onion
  • 5 sprigs of fresh thyme
  • 5 cloves of garlic
  • 1 tablespoon paprika
  • 1 basil leaf

CARDAMOM GINGER BROTH INGREDIENTS:

  • 1 1/2 cups prepared broth base
  • 1 teaspoon grated fresh ginger
  • 1/4 teaspoon ground turmeric
  • 1/4 teaspoon ground cardamom
  • 1 Tablespoon gelatin
  • A squeeze of lemon
  • Add chilly salt and pepper for your taste

Directions

Prepare chicken broth base first. Place chicken, apple cider vinegar, salt, rest broth ingredients and water in a pressure cooker and simmer on a low temperature for 10 to 15 min. The longer you leave it, the more minerals will leach from the chicken.

Remove broth from heat. Strain out chicken, and store the liquid in jars. Refrigerate for up to 5 days or freeze after cooling completely.

Use the broth base for soups and meals, or prepare cardamom ginger broth: Add all ingredients to a small saucepan and gently heat until warmed, stirring occasionally.

Pour into a mug and add a squeeze of lemon. Serve warm with buns or crispy sweet potato toast.
