Gelito Green Coconut Pandan Jelly recipe

Ingredients:

  • 1 tablespoon Halal Gelatin powder
  • 1 cup coconut milk
  • 1/2 cup pandan juice (blend pandan leaves with water and strain)
  • 1 cup water
  • 1/4 cup sugar (adjust to taste)
  • 1/4 teaspoon vanilla extract (optional)
  • A pinch of salt

Directions:

  1. Prepare the gelatin:
    Bloom 1 tbsp halal gelatin in 1/4 cup cold water for 5 minutes.
  2. Make the pandan layer:
    Heat pandan juice, 1/2 cup water, and sugar until dissolved. Stir in gelatin and pour into molds. Chill for 30 minutes.
  3. Make the coconut layer:
    Heat coconut milk, 1/2 cup water, sugar, vanilla, and salt. Stir in gelatin until dissolved.
  4. Layer and set:
    Pour the coconut mixture over the pandan layer and refrigerate for 2-3 hours until fully set.
