Gelito Green Coconut Pandan Jelly recipe
Ingredients:
- 1 tablespoon Halal Gelatin powder
- 1 cup coconut milk
- 1/2 cup pandan juice (blend pandan leaves with water and strain)
- 1 cup water
- 1/4 cup sugar (adjust to taste)
- 1/4 teaspoon vanilla extract (optional)
- A pinch of salt
Directions:
- Prepare the gelatin:
Bloom 1 tbsp halal gelatin in 1/4 cup cold water for 5 minutes.
- Make the pandan layer:
Heat pandan juice, 1/2 cup water, and sugar until dissolved. Stir in gelatin and pour into molds. Chill for 30 minutes.
- Make the coconut layer:
Heat coconut milk, 1/2 cup water, sugar, vanilla, and salt. Stir in gelatin until dissolved.
- Layer and set:
Pour the coconut mixture over the pandan layer and refrigerate for 2-3 hours until fully set.
