Pink champagne jellies with lychees in fragrant syrup recipe
Ingredients:
- 1 cup pink champagne (or sparkling rose)
- 1/4 cup water
- 1/4 cup sugar
- 2 teaspoons gelatin powder
- 1 can lychees in syrup (reserve the syrup)
- 1 teaspoon rose water (optional)
- Plucked fresh mint leaves from the stem for decoration
Directions:
- Prepare the Gelatin: Get a cupful of water and sprinkle the gelatin evenly over it, it can then be left for 5 minutes to puff up.
- Make the Syrup: In a small saucepan over medium heat, combine the reserved lychee syrup and the sugar and heat until the latter captures all the sweetness. Remove from heat and add the rose water.
- Dissolve the Gelatin: Slowly pour the syrup on the bloomed gelatin and while the two are together mix them till every minute particle of gelatin disappears.
- Combine with Champagne: Allow the syrup to cool slightly and then, slowly pour in the pink champagne while continuing to stir gently.
- Set the Jelly: Pour the mixture into small serving glasses or molds. Place a few Lychee fruits inside each of these glasses. Leave for at least 4 hours in the refrigerator and more until it is firm.
- Serve: Ensure you sprinkle fresh mint leaves on the appetizer before serving.
