This Keto Coconut Mousse is sweet and fluffy. It’s a great light and sugar-free dessert! Perfect dessert for summers.
Ingredients
- 1 ½ cups Coconut Cream (if not on keto diet use coconut milk)
- 1 ½ tablespoon Gelatin Powder
- ¼ cup any sweetener
- 1 teaspoon Vanilla Essence
- 1 teaspoon Coconut Essence
- 1 ½ cups Heavy Cream
- 1 tablespoon Unsweetened Shredded Coconut toasted
- 4 Keto Coconut Wafers optional
- ½ cup Keto Whipped Cream optional

- Place the coconut cream, gelatin, sweetener, vanilla, and coconut essence in a small saucepan over medium heat.
- Bring to a simmer, ensure the gelatin has dissolved, then remove from the heat. Leave to cool until almost at room temperature.
- Place the cream in a large bowl and using a hand mixer, whisk to firm soft peaks.
- Add a little of the coconut mixture at a time and whisk through. The mixture will be thick and pourable.
- Pour into 4 serving glasses or ramekins. Cover and set in the fridge for 3 hours.
- Serve garnished with a Keto Coconut Wafer and Whipped Cream.
