Ingredients:
-
2 cups fresh strawberries (washed, hulled, and chopped)
-
3 large navel oranges (zested, peeled, and chopped)
-
1 large lemon (zested, peeled, and chopped)
-
1 cup water
-
1 package (57g) pectin crystals
-
1 tablespoon gelatin (optional, for firmer set)
-
1/8 teaspoon baking soda
-
3 cups granulated sugar
Instructions:
-
Prepare the Fruit: Wash, hull, and chop the strawberries. Zest, peel, and chop the oranges and lemon.
-
Combine Ingredients: In a large saucepan, combine the strawberries, citrus fruits, and water. Stir in the pectin crystals, gelatin, and baking soda.
-
Cook the Mixture: Bring the mixture to a boil over medium-high heat, stirring constantly. Once boiling, add the sugar all at once and stir until dissolved.
-
Boil and Test: Return the mixture to a boil and cook for 10–15 minutes, or until it reaches the desired consistency. Test by placing a spoonful on a cold plate; if it wrinkles, it’s ready.
-
Jar the Marmalade: Carefully pour the hot marmalade into sterilized jars, leaving about 1/4 inch of space at the top. Seal with lids and let cool to room temperature.
-
Store: Once cooled, store the marmalade in the refrigerator for up to 3 weeks.
