How to Make Homemade Marshmallows Using Gelatin Powder

Ingredients:

  • 3 tablespoons unflavored gelatin powder

  • 1/2 cup cold water (for blooming)

  • 1/2 cup hot water

  • 1 1/2 cups granulated sugar

  • 1/4 teaspoon salt

  • 1 teaspoon vanilla extract

  • Powdered sugar (for dusting)

Instructions:

Step 1: Bloom the Gelatin

  • Add 3 tbsp gelatin to 1/2 cup cold water in a mixing bowl.

  • Let it sit for 5–10 minutes to bloom.

Step 2: Prepare Sugar Syrup

  • In a saucepan, add:

    • 1/2 cup hot water

    • 1½ cups sugar

    • 1/4 tsp salt

  • Heat and stir until the sugar fully dissolves.

  • Bring to a boil for 5–6 minutes, then remove from heat.

Step 3: Mix Gelatin & Syrup

  • Slowly pour the hot syrup into the bloomed gelatin.

  • Beat the mixture using a hand mixer or stand mixer on high speed for 10–12 minutes.

  • The mixture will turn white, fluffy, and increase in volume.

Step 4: Add Flavor

  • Add 1 tsp vanilla extract and beat for 1 more minute.

Step 5: Set the Marshmallows

  • Grease a square pan and dust it with powdered sugar.

  • Pour the marshmallow mixture into the pan.

  • Spread evenly and let it rest at room temperature for at least 6 hours (or overnight).

Step 6: Cut & Dust

  • Once set, cut into squares using a greased knife.

  • Dust each piece with powdered sugar to prevent sticking.
